GRANDMA IRENE'S PUMPKIN PIE

Grandma Irene made this pumpkin pie every year on Thanksgiving. Although there are only a few variations from the original Libby's recipe, the result is a world of difference. Dale always looked forward to his best breakfast of the year, when he would sit down on Thanksgiving morning with a big slice of cold pumpkin pie and a glass of milk. It was a special time with "mom" that he always treasured. On the last Thanksgiving before she passed away, Irene invited Dale over to help her make it. As a result, Irene's recipe will live on forever. It is truly the best pumpkin pie in the world.

This is great. Easy enough to prepare after work, yet elegant enough for company and with flavor to spare. This is a recipe that came from a member of my daughters online playgroup. (Thanks Alice) It is very simple and delicious, but impressive. Your guests will think that you are indeed a "chef". I like to double the sauce recipe and serve this with pasta. Also a quick note: for a variation that tastes just like Johnny Carino's Chicken Scaloppini, make sure to double the sauce recipe and add diced bacon and chopped Roma tomatoes and serve over angel hair pasta.
